Happy Sunday everyone!

Weekends always equal delicious breakfasts for me as we actually have the time to cook.  Another time that always yields delicious breakfasts for me? Vacation time! Breakfast is the one meal I can always count on eating when we’re on the road or traveling. Which is one of the reasons I LOVE vacation rentals. The extra space, privacy, multiple bedrooms, washes and dryers – they’re all great. Especially when you’re traveling with relatives you’d prefer not to be listening to snore. (Just me?)

But the fully-equipped kitchen is where it’s at. This is my must-have for when we travel because A) breakfast gets SO expensive if you’re going out all the time and B) I like big breakfasts (and I cannot lie.) I like to start the day with something hearty, knowing that we’ll be on the go and the next mealtime is rarely ever planned ahead of time.

So, since July is National Vacation Rental Month, I wanted to celebrate a little bit with some delicious breakfasts with a twist. These seven easy breakfasts only need seven ingredients. There are seven different meals so if you’re going away for a week, you don’t ever have to eat the same thing. Or you can eat all of this in one day with a loved one like I did and swear you’ll never eat again. Bonus: all ingredients can be found at most grocery stores. Meaning if you travel to the middle of nowhere to get away, stop by and say hi since that’s where I live the grocery store will still have these ingredients!

The ingredients are as follows:

  • Avocados
  • Bread
  • Butter
  • Canadian Bacon
  • Eggs
  • Maple Syrup
  • Swiss Cheese

Salt and pepper is not included, but if you have it – season to your enjoyment! On to the seven easy breakfasts :)

Monte Cristo Sandwich

Ingredients Used:

  • Bread, 2 Slices
  • Egg
  • Canadian Bacon, 2 Pieces
  • Swiss Cheese, 2 Slices

Steps:

  1. Preheat a pan over medium heat.
  2. Crack an egg in a dish and scramble it.
  3. Lay the slices of bread in the egg and coat one side. Depending on the thickness of your bread, you may need more than one egg.
  4. Lay the first slice in a pan, egg side down. Top with Canadian bacon and swiss cheese.
  5. Top with the second slice of bread, egg side up.
  6. Cook over medium heat until the outside of the bread has started to brown on the bottom.
  7. Flip and cook until the other side starts to brown.
  8. Enjoy!

Scrambled Eggs + Toast

Ingredients Used:

  • Bread, 1 Slice
  • Butter
  • Egg
  • Optional Add-Ins: Cheese, Canadian Bacon, Avocado

Steps:

  1. Preheat a pan over low to medium heat.
  2. Crack an egg in a dish and scramble it.
  3. (Optional) Add in a small amount of water for fluffier eggs.
  4. Pour into a pan and cook. Add in the optional add-ins just before the egg has fully cooked to warm.
  5. Toast the bread and spread on butter.
  6. Remove the eggs once they’re the desired consistency and enjoy!

Egg in Toast

Ingredients Used:

  • Bread, 1 Slice
  • Butter, 1 Tbsp
  • Egg

Steps:

  1. Melt a tablespoon of butter in a pan over low to medium heat.
  2. Punch a hole in the middle of a slice of bread. You can use a cup, jar lid, mason jar ring, or even cut your own design.
  3. Lay the bread down on the melted butter.
  4. Crack the egg over the hole, careful not to break the yolk.
  5. Cook until the egg has somewhat set and flip.
  6. On the other side, cook until the egg has set to your desired consistency.
  7. Enjoy!

Avocado Cheese & Canadian Bacon Omelet

Ingredients Used:

  • Egg
  • Avocado, 4 Slices
  • Canadian Bacon, 1 Piece
  • Swiss Cheese, 1 Slice

Steps:

  1. Preheat a pan over low to medium heat.
  2. Crack an egg in a dish and scramble it.
  3. (Optional) Add in a small amount of water for fluffier eggs.
  4. Pour into the pan. Let sit for a minute or two and then lift the edges of the egg and tilt to cook the egg more evenly/quickly.
  5. Layer the avocado, Canadian bacon and cheese down the center of the egg.
  6. Once the egg has mostly cooked, fold one side over the add-ins. Fold the over side over so it’s on top of the add-ins and other side of the egg.
  7. Enjoy!

Egg, Cheese and Canadian Bacon Sandwich

Ingredients Used:

  • Egg
  • Bread, 2 Slices
  • Canadian Bacon, 2 Pieces
  • Swiss Cheese, 1 Slice

Steps:

  1. Preheat a pan over low to medium heat.
  2. Crack an egg into the pan and cook to desired consistency.
  3. Toast your bread.
  4. If you have room in the pan you’re cooking the egg in, lay the Canadian bacon down and set the cheese on top towards the end – just enough to warm. Otherwise, add it in after you’re done with the egg and have placed it on one of the pieces of toast.
  5. Place the egg, Canadian bacon and cheese between the toast and enjoy!

Baked Egg in Avocado

Ingredients Used:

  • Egg
  • Avocado

Steps:

  1. Preheat the oven to 350F.
  2. Halve an avocado, remove the pit, and scoop out about a tablespoon or two of one of the halves.
  3. Lay on/in an oven safe dish or pan. To steady, try one of two methods: 1) Slice a portion off the “bottom” where it will lay on the pan to give it a flat surface. 2) Use foil to wrap around it and create a mini-cradle.
  4. Crack an egg over the half that you scooped out, careful not to bump the avocado and spill it.
  5. Cook for 15-20 minutes or until the egg is your desired consistency.
  6. Enjoy!

Easy French Toast

Ingredients Used:

  • Bread, 1 Slice
  • Egg
  • Butter
  • Maple Syrup

Steps:

  1. Preheat a pan over low to medium heat.
  2. Crack an egg in a dish and scramble it.
  3. Lay the slice of bread in the egg and coat both sides. Depending on the thickness of your bread, you may need more than one egg.
  4. Lay the bread in the pan, cooking until the side down has started to brown.
  5. Flip the bread and repeat.
  6. Top with butter, maple syrup, and enjoy!
