Seriously. Like love love. I don’t know what I would do without it some days. Ever since Lily was born, my energy to cook is a rollercoaster ride I’d be happy to hop off of any day now. Some days we make it to the kitchen together, some days dad’s in charge and I’m just happy to eat a warmish meal.
But our slow cooker has helped me out a ton in that department. I’ve made a few delicious dishes with it recently, including this simple slow cooker bean dip.
This slow cooker bean dip recipe is perfect for game day or any get-together where snacking is involved. I won’t lie though – add some chips and this is totally a main meal for me.
Not only is this slow cooker bean dip inexpensive, but it’s an easy crowd pleaser. Perfect for entertaining when you’re short on time or need to give your attention to another dish (or person in my case.)
Add the rest of the ingredients except for tomatoes and cook on low for 8 hours.
Once done, add 1 can of tomatoes.
Puree mixture in blender in batches or puree directly in crock pot with immersion blender.
Stir in remaining can of tomatoes.
Serve hot with tortilla chips.

It tastes great leftover – it just may need a little bit of liquid to thin it out
