The leaves are changing (and falling), the temperatures are dropping, and the shorts have been packed away for the year. Our kitchen has also transformed, making room for delicious root vegetables and squash over fruit. I know a loaf of homemade bread will be in our near future, too.

This is my favorite time of the year for these reasons and so many more, but Autumn is especially perfect for getting outdoors. We love to squeeze in as much time as we can before the snow falls (which, if it’s anything like last year, could be within a few weeks!) Hikes, picnics, and even a last hoorah with our fire pit.

And the recipe I have today is perfect for all of that! This Potato Leek and Corn Chowder just screams comfort food for me and that’s exactly what I want as the weather gets cooler. Plus, with the Stanley Crock (shown in the photo above) – you can take it along with you for a hot meal during your next picnic or  after your next hike!

Potato Corn and Leek Chowder
Ingredients
  • 2 pounds potatoes we used russet and red
  • 2 cups leek 1 large leek
  • 1 cup chopped carrots
  • 1 cup diced red onions
  • 2 cups corn
  • 2 cups skim milk
  • 3 tbls all purpose flour
  • 3 cups chicken broth
  • 12 oz Canadian bacon
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
Instructions
  1. Melt the butter in a large stockpot over medium-high heat.
  2. Sauté the onion, leek, & carrot until tender (approximately 5-7 mins.)
  3. Whisk together flour & milk. Slowly pour into the stockpot.
  4. Add remainder of ingredients and bring to a boil.
  5. Reduce the heat and simmer 20 mins
