We grilled out over the weekend and oh my goodness, I forgot how much I loved grilled food. But especially vegetables. I’m fairly certain that nearly all vegetables are better on the grill. Sadly, we planned too much for the grill which meant that I had to find another way to use up the asparagus that we had sitting in the fridge.
Did I mention we figured this out as the grill was already preheated and ready to go? No? Well, we did. And I had about five minutes to come up with something so it could cook and be done with the rest of the food.

It’s super simple. Maybe even too simple for it to really be considered a recipe. But I loved it SO much. Even more so than grilled asparagus. (Which is, for the most part, the only way I eat asparagus outside crescent roll wrapped asparagus which I’ll share next week!) It was SO delicious. I am so sad that we already ate it all.
I’m pretty sure that every time my husband asks if I want a side of vegetables with a meal this Summer, the answer will always be “yes – if it’s baked asparagus.” So I’m going to share this quick, easy and delicious baked asparagus recipe with you guys and gals so you can love your vegetables, too.
- 1/2 lb of Asparagus ends chopped off
- 2 1/2 tbsp of Olive Oil
- 1/2 Tsp of Salt
- 1/2 Tsp of Garlic Powder
- 1/2 Tsp of Onion Powder

Preheat the oven to 375F and place the asparagus in a casserole dish.

Drizzle the olive oil over the asparagus and toss with a pair of tongs.

Sprinkle the salt, garlic powder, and onion powder over the asparagus. Toss with the tongs again.

Bake for 8-10 minutes, or until the asparagus is bright green.
