Frito Corn Salad
Ingredients
  • 2 Cups Shredded Cheddar Cheese
  • 12 Oz Frozen Sweet Corn Thawed
  • 1/2 Cup Red Bell Pepper Chopped
  • 1/2 Cup Green Bell Pepper Chopped
  • 1/2 Cup Mayonnaise
  • 1/2 Cup Sour Cream
  • 1/4 Cup Diced Red Onion (Optional)
  • 10 Oz Fritos
Instructions

  1. In a large bowl, combine everything except for the Fritos and mix thoroughly.

  2. Keep in refrigerator until ready to serve. When serving, crush the Fritos on top a bit to make it easier for eating.

Recipe Notes
  1. Toss the Fritos in the freezer an hour or more before serving to keep them crispier longer. Make sure you do not add the Fritos until you're about to serve the dish.
  2. You can always hange up the Frito flavor to give the salad a new twist!
