Preheat the oven to 325 degrees. Toast the cubed bread on a cookie sheet until dry and slightly brown (about 10-15 minutes.)
In a large bowl, whisk together the milk, heavy cream, salt, vanilla, eggs, maple syrup, cinnamon, and nutmeg. Add in the bananas and stir.
Add the toasted bread to the mixture once it's done and toss.
Pour the mixture into a buttered 9x9 pan and spread out evenly. Top with pecans.
Bake until the top starts to brown and the liquid is mostly absorbed (about 30 minutes.) Let cool for 10 minutes. Serve with maple syrup (optional.)
